when i change a value of gems it changes but when i use some of gems the value changes back .

Could be a server checked/sided value or could just be hash generated and checked if the lateral then there could be a few ways of going about it but firstly do try @blocx suggestion of indirectly hacking the value if that's to no avail then it maybe necessary to dump memory and hex patch the corresponding offset (might not be so easy if the main .so file isn't libil2cpp)
